This Quiche has no crust, but is packed with protein and veggies!

Don’t be afraid! Try this Crustless Quiche Casserole and modify to your tastes.

Prep time: 30 minutes

Cook time: 30 minutes

Preheat oven: 350°

Ingredients:

  • Sweet Potato (medium, thin sliced)
  • Chicken & Apple Sausage (4-5 links, chopped)*
  • Brocoli (one medium head, chopped)
  • Red Pepper (1/2 medium, chopped)
  • Red Onion (1/2 medium, chopped)
  • Sun-Dried Tomatoes (1/4 cup, chopped)
  • Baby Bella Mushrooms (3-4, chopped)**
  • Garlic (2-4 cloves, minced)
  • Eggs (8-9, whisked)
  • Extra-Sharp White Cheddar (1-2 cups, grated)
  • Herb Seasoning (1-2 tsp)***
  • Olive Oil (1 tbsp)

*Any sausage substitute would work, suggest draining fat

Prep:

Preheat oven to 350°

Slice Sweet Potato

Chop Chicken & Apple Sausage, set aside in separate dish

Chop/slice ingredients except eggs and seasoning, set aside in separate dish (should make 4 cups)

Mix eggs, cheese (1 cup, reserving another cup for topping) and seasonings, set aside in separate dish

Cook:

Add oil to large sauté pan (3-4 qt) and heat to medium high

Sauté sweet potatoes until their color deepens and they become semi-transparent.

Season with Mrs. Dash® Table Blend and McCormick Gourmet™ Bon Apétit®.

Spread sautéed sweet potatoes over the bottom of a 13 x 9 baking pan.

Sauté sausage for 3-5 minutes.

Add remaining chopped/sliced ingredients to sausage and sauté together over medium-high heat for 5-7 minutes.
